Chicken Fajitas on the Griddle – Easy, Quick, and Packed with Flavor!
Chicken fajitas on the griddle – a dish that suits both adults and kids – it’s quick, easy, and bursting with flavor! Sear seasoned chicken on the griddle and fill tortillas with juicy fajita-spiced chicken, creamy guacamole, and fresh salad leaves. Top with cilantro and a squeeze of lime – and you’ve got an awesome dinner in no time!
Ingredients (4 servings)
Fajitas:

500 g sliced chicken fillet

2 yellow onions, quartered
-
2 bell peppers (seeded and sliced)

1/2 zucchini, coarsely chopped
-
1 small can of corn
-
1 tbsp oil for frying
-
1 packet fajita seasoning mix (28 g)

1 pack of tortillas (8 pcs)
To Serve:

8 salad leaves
-
Guacamole
-
1 lime
-
1 bunch of cilantro
Instructions:

Light the fire and place the griddle on top.
We used the Solo Stove Bonfire as a heat source and the Dalum 50 griddle. -
Cook the chicken fillet until it gets a golden surface. Throw on the onions, bell peppers, and zucchini, and let everything get a nice color.

Add the seasoning mix and lower the heat slightly. Sauté for about 3 minutes until everything is cooked through and smells amazing.

Warm the tortillas on the griddle – extra delicious when they’re warm but still soft.

Fill each tortilla with a salad leaf, a scoop of chicken fajita, and a dollop of guacamole.

Top with cilantro and a squeeze of lime. Fold and serve immediately.
