Season the Griddle

Before you start cooking on a griddle or Dalum griddle, you need to season the griddle. This process creates a surface that provides excellent cooking properties and makes the griddle easy to clean and maintain. The more you use your Dalum griddle, the better it will get!

step by step guide:

  • Clean the griddle with water and a little dish soap. Rinse it thoroughly with water and wipe it off with a cloth.
  • Rub a thin layer of rapeseed oil onto the Dalum griddle using a piece of paper or a cloth. You can also use cooking fat, such as Silava from Muurikka.
  • Heat the griddle by placing it on the grill, over a gas burner, or over an open fire. The griddle will begin to darken after a while, and you'll notice smoke as the fat starts to burn in—that's when you know the seasoning process has begun!
  • Repeat with a new layer of oil until you're satisfied. It's fine if the entire griddle doesn't darken immediately; achieving an even dark surface improves the cooking properties, makes it easier to clean, and offers better protection against rust. However, if it doesn't darken completely during the seasoning, don't worry— the more you use your griddle, the darker it will get and the better it will perform.
  • Remove the griddle from the heat source and let it cool. Great job! You've now seasoned your griddle. Finish by applying a thin layer of fat over the entire surface to protect it for the next use.

Choice of heat source for seasoning.

You can use different types of heat sources when seasoning the griddle. The time needed for seasoning depends on the choice of heat source, its heat output, and the amount of direct heat it provides. Choose the heat source that suits you best. Add a thin layer of vegetable oil on the griddle surface and use heat source selected.

Fire – Make a fire where the flames ideally cover the entire griddle. This will provide a lot of direct heat, and the seasoning process will be faster. If it's windy, the seasoning will go faster if the fire is shielded from the wind.

Gas – A gas burner for griddles (also called a ring burner) works well. You may need to move the griddle around during the seasoning process to create direct heat over the entire surface.

Grill – A charcoal grill works well for seasoning the griddle. Use plenty of charcoal and spread it out so the griddle gets as much direct heat as possible, which will speed up the seasoning process.

Oven – season of the griddle can be carried out in the kitchen oven, as long as you are fine with some smoke during the process. Pre heat the oven to 200-250 degrees Celcius for about 1 hour.
