Crispy vego patties with spicy chickpeas.

Cooking food over an open fire on the griddle does something magical to the flavours and this recipe is no exception. Bring your friends, start the fire and create food magic.

Recipe 4 people

Start off by making the tzatziki. Place the grated cucumber in a bowl, sprinkle with a little salt and let stand for a few minutes. Squeeze out as much liquid as possible and then mix with the other ingredients. Season with vinegar, pepper and a little more salt if necessary. Alternatively, you can buy ready-made tzatziki at your local grocery store.

Tzatziki:
1 cucumber, coarsely grated
5 dl fat yogurt
1 garlic clove, pressed
3 tbsp olive oil
A few splashes of lemon or white wine vinegar
Salt & black pepper

Halloumi & beetroot patties
600 g boiled beetroot, peeled and coarsely grated
2 packages Halloumi, coarsely grated
2 eggs
Breadcrumbs
Salt & Black pepper
Halloumi & beetroot patties, this is how we did it: 
Mix beetroot and halloumi in a bowl together with eggs, breadcrumbs, salt and pepper. Allow the batter to drain for a while through a sieve. Shape the beetroot mixture into patties and smooth the edges. Pour olive oil into the frying pan and fry the beet paties on low heat on both sides until crisp with a nice colour. Don't turn the patties too soon, they will fall apart. 

Spicy Chickpeas:
2 tetra packs of cooked chickpeas, rinsed and drained
1 teaspoon chili flakes
1 tsp cumin
1 tsp paprika powder
Olive oil for frying

Pour a good amount of olive oil in the middle of the griddle  and fry the chickpeas in the oil. Season with cumin, chili and paprika and fry gently until the chickpeas become slightly crispy. Season with salt and pepper.

Serve the patties with the chickpeas and Tzatziki.
