Squash Pasta with Miso Chantarelles
2 servings
- fettuchini for two
- 2 garlic cloves
- 300 gram butternut squash
- 2 tsp miso paste
- 2 handfuls of funnel chantarelles
- Handful of hazelnuts
- 100ml oat cream
- 1 tbsp butter
- a pinch of salt
- a pinch of black pepper
How to:
- Peel and dice butternut squash and garlic cloves
- Pour water on the griddle
- Add pasta, butternut squash, garlic and a pinch of salt
- Cook with small heat until pasta is al dente and water has absorbed
- Toss funnel chantarelles into the side of the griddle, mix with miso paste
- Add butter
- Mix mushrooms and pasta together
- Pour in oat cream
- Finish with black pepper and hazel nuts
