Squash Pasta with Miso Chantarelles

2 servings

  • fettuchini for two
  • 2 garlic cloves
  • 300 gram butternut squash
  • 2 tsp miso paste
  • 2 handfuls of funnel chantarelles
  • Handful of hazelnuts
  • 100ml oat cream
  • 1 tbsp butter
  • a pinch of salt
  • a pinch of black pepper

How to:

  • Peel and dice butternut squash and garlic cloves
  • Pour water on the griddle
  • Add pasta, butternut squash, garlic and a pinch of salt
  • Cook with small heat until pasta is al dente and water has absorbed
  • Toss funnel chantarelles into the side of the griddle, mix with miso paste
  • Add butter
  • Mix mushrooms and pasta together
  • Pour in oat cream
  • Finish with black pepper and hazel nuts
