Dalum wok

This wok is one of our absolute favorite recipes that we got a tip from our friend Susanne Jonsson. A really good and nutritious vegetarian wok that is easy to prepare and which usually makes a success of outdoor cooking. A perfect dish to cook on the grill.

  • 1 sweet potato
  • 10 chestnut mushrooms
  • 1 red onion
  • 1 Halloumi
  • 1 bag of grated cabbage & carrots
  • Kale
  • Fresh ginger
  • Japanese soy
  • Sweet chili sauce
  • Cashews or peanuts
  • Fresh coriander
  • Creme fraiche
  • Salt and pepper

This is how we did it:
Slice the sweet potato, divide the mushrooms into 2-4 parts, chop the red onion and dice the halloumi.

Start by frying the sweet potatoes until they get colour, then add the mushrooms and halloumi. Make sure the halloumi gets a frying surface before turning it over.

Add the kale, grated white cabbage and carrots and grate over the fresh ginger and fry together for a while with the other ingredients. Season with salt and pepper and Japanese soy. As the last step, add sweet chili and stir the wok.

Before serving, top with nuts and fresh coriander.

Serve with creme fraiche.
