Vegan Salmon Pizza

  • Pizza dough (ready-made or homemade)
  • 1 pack of vegan cheese
  • 200 ml vegan oat fraiche
  • Vegan cold smoked salmon
  • ½ zucchini
  • Caper
  • Arugula
  • Spring onion
  • Dill
  • Salt & pepper


Slice the zucchini and fry in a frying pan with oil. Work the dough into circles. Fry on an oiled griddle, fry on both sides until golden brown. Top with vegan cheese and let melt. Spread oat fraiche and top with vegan cold-smoked salmon, roasted zucchini, capers, rocket, spring onion, dill, salt and pepper.

Pizza Dough:
600 ml of water
300 ml wheat flour
11 g dry yeast
1 tsp salt
2 tbsp olive oil
Mix flour, dry yeast and salt in a large bowl. Combine dry ingredients with finger-warm water and knead the dough until it forms an elastic ball and begins to pull away from the sides of the bowl. Cover and let rise for 45 minutes.

Vegan cold smoked salmon:
3 carrots
1 liter of water
1 ½ tbsp sugar
1 tablespoon salt

Marinade:
1 tsp liquid smoke
1 tsp apple cider vinegar
2 tbsp oil
½ tsp salt
½ tsp sugar

Peel the carrots and slice with a peeler. Boil with water, sugar and salt for 10 minutes. Allow to drain. Mix the slices together with the marinade.
